1 lb. sea scallops, rinsed and patted dry
1 T olive oil
1 T butter
1/2 c honey
1/4 c orange juice
4 t lemon zest
3 t lime zest
2 1/2 t. Sriracha (hot chili sauce)
salt and pepper to taste

Directions:
Directions:
Make marinade starting with honey and ending with salt and pepper. Set aside for one hour. In a heavy pan, melt olive oil and butter on medium high heat. Add scallops and cook on each side for 2 minutes. Remove from heat and baste scallops with marinade on both sides. Place under broiler set on high for additional 3 minutes, making sure not to over cook.
