4 c sliced yellow squash
1 onion, diced
1/2 stick butter
1 1/2 c chicken broth
1 1/2 c half and half ( or Almond milk)
1 tsp salt
1/2 tsp pepper
1/2 c parmesan cheese
2 c colby jack cheese

Directions:
Directions:
In a big pot- cook squash, onion, butter, broth on med heat until the squash is tender( about 15-20 min) Let cool and then put in a blender until smooth. Put this mixture back in the pot and add the rest of the ingredients. Stir until cheese melts.

Be careful not to let this burn. The milk and cheeses can get over heated if you don't stir it the whole time.
