4 c chicken broth
4 c peeled and cubed potatoes
1/2 c onion chopped
1/2 tsp season salt
1/4 tsp pepper
1 (8oz) pkg cream cheese

Directions:
Directions:
Combine broth, potatoes, onion, and spices. Boil on med heat until potatoes are tender ( about 15 min may be longer if the potatoes are in bigger pieces).
Smash a few of the potatoes to release starch for thickening. Add cream cheese in small chunks and heat until cheese is melted.
