1 lb. mixed greens sweet and bitter (butter, romaine, red leaf, radicchio, fennel, endive, spinach, mache, arugula, Bibb) torn by hand;
Fine sea salt
Vinegar (Zinfandel, Cabernet, Champagne, black fig, balsamic, etc), or fresh lemon juice;
Good olive oil
Thin sliced red onion, grated beets, grated carrots, lightly cooked green beans, sun dried tomato, avocado, sliced mushrooms, sprouts, olives, cucumber);
Fresh ground pepper

Tear lettuces into pieces;
Sprinkle lightly with salt and toss.
Sprinkle with vinegar until aroma rises gently from bowl. Toss;
Drizzle with olive oil (3 times vinegar or equal parts with lemon juice), toss;
Add pepper and any other ingredients
