1/4 c. shortening
2/3 c. sugar
2 eggs (well beaten)
1/2 c. apple sauce
2 c. all purpose flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp. salt
2 c. grated raw green apples
1 tbsp. grated lemon peel
2/3 c. chopped walnuts

Directions:
Directions:
Cream shortening and sugar until light and fluffy, beat in eggs and apple sauce. Mix flour, baking powder, soda and salt. Add alternately grated apples to egg mixture. Stir in lemon peel and chopped walnuts. Pour into greased and floured loaf pans and bake at 350º for 50-60 minutes.
