1 frying chicken (can use chicken tenders & deboned thigh's)
1 cup flour
salt
pepper
1-2 eggs
cooking oil
1/4 cup flour
milk

Directions:
Disjoint and clean chicken; you can remove skin.
Salt & pepper chicken
Mix flour a little salt & pepper in a bowel.
Beat eggs in a bowl.
Heat oil in a heavy skillet, use enough oil to cover chicken while frying.
Brown chicken on all sides.
When chicken is all done put 2 tablespoons of chicken frying oil in a sauce pan. Add about 1/4 cup flour to oil stir in flour and cook till flour is a light brown and has a nut smell. Add milk to make gravy. Cook stirring constantly, until smooth. Season to taste with salt & pepper. Serve with mashed potatoes & chicken.

This is a traditional New Year's Day meal with Blackeyed Peas, Cabbage Salad & Corn Bread.
The grandkids love the gravy with their chicken.
