2 c. stale bread
2 c. rhubarb
3/4 c. sugar
small amount of nutmeg or cinnamon
2 egg yolks
1/2 c. sugar
2 c. milk
egg whites
3 tbsp. sugar

Directions:
Directions:
Cut stale bread into small pieces, dice rhubarb and put a layer of bread crumbs in bottom of baking dish and dot with butter. Add a layer of rhubarb and sprinkle with 3/4 c . sugar and a small amount of nutmeg or cinnamon. Continue until all the bread and rhubarb is used.

Beat 2 egg yolks and add 1/2 c. sugar and 2 c. milk. Pour over rhubarb-bread mixture and bake slowly at 350º for 1 hour. When pudding is done, beat egg whites stiff with 3 tbsp. sugar. Spread on top of pudding and bake until light brown.
