Blueberry Stuffed French Toast Casserole (Charlie Parkers Diner) Recipe

Prepare night before:

12 slices Bread
1 8oz. package cream cheese
2 cups fresh or frozen Blueberries
10 eggs
1/3 cup maple syrup
2 cups milk

Sauce:
1 cup water
2 Tbsp. cornstarch
1 cup sugar
2 cups fresh or frozen blueberries
1Tbsp. butter
1/2 tsp. cinnamon
Whipped cream optional

Directions:
Directions:
Cube bread.
Spray bottom 9x13 glass baking dish with vegetable spray.
Place 1/2 of the bread cubes in the pan.
Cube cream cheese and put on top of bread.
Layer 2 cups blueberries next.
Then layer with remaining bread cubes.
Beat eggs and add maple syrup and milk.
Pour mixture over casserole and cover with plastic wrap and refrigerate overnight.

Bake casserole, covered with foil at 350º for 30 minutes. Remove foil and cook for an additional 30 minutes or until it is puffed and golden.

Let sit for 10 minutes before slicing and plating.

Sauce:
( This is also the best Blueberry syrup I have ever had)

Cook water, cornstarch, sugar and 1 cup of blueberries until it thickens. Add remaining 1 cup of blueberries, butter, and cinnamon.
Pour sauce over the individual slices. Top with whip cream if desired.
