2 c. cooked rice
1 pkg. frozen peas, cooked & drained
1/4 c. onion, chopped
1 (6 oz.) can shrimp, drained
1 c. celery, chopped
1/2 c. oil
1/2 c. sugar
3 T. vinegar
2 T. soy sauce
1/4 tsp. curry powder
1 tsp. salt
1 (16 oz.) can cashews

Directions:
Directions:
Mix rice, peas, onion, shrimp, and celery in a bowl, set aside. In a jar, mix oil, sugar, vinegar, soy sauce, curry powder, and salt. Shake well. Add to rice mixture and stir well. Stir in half a can of cashews. Top with remaining cashews before serving. Can be refrigerated overnight before serving, but it's not necessary.
