Crust
1 cup all purpose flour
1/3 cup confectioners sugar (powdered)
1/8 teaspoon salt
1/2 cup cold unsalted butter
Filling
5 oz. cream cheese
1/2 cup lemon juice (fresh)
1/2 cup granulated white sugar
2 large eggs
1 tablespoon grated lemon zest
whipped topping
1/2 cup (120 ml) whipped cream
1 table spoon confectioners sugar

Preheat oven to 425
1. mix the four, sugar, and salt in a processor until mixed. Then slowly add small, cut pieces of the butter mix till dough starts to form.
2. Press into a pan and freeze 15 min.
3. pierce bottom of crust with fork
4. bake 13-15 minutes reduce heat to 350.
5. Process the cream cheese until smooth
6. add sugar to process
7. add eggs on at a time to process
8. add remaining ingredients to process
9. pour into crust and bake til filling is firm.
10. Put bowl & whisk in freezer for 15 minutes.
11. beat cream and sugar until stiff peaks from, pour on filling when it is cooled
