2 bunches spinach
1 ½ cups grated cheese – parmesan type and cheddar mixed to taste
1 dessertspoon flour
salt and pepper

Pastry:
½ cup oil
½ cup iced water
½ cup grated cheese – optional
½ teaspoon salt
2 ½ cups flour (approx.)
1 teaspoon lemon juice or vinegar
grated cheese for garnishing

Directions:
Directions:
Remove stalks, wash and shred spinach. Lay out to dry on a cloth. Mix all ingredients together.

Mix dry ingredients. Add water and lemon juice/vinegar and need together. Roll out into flat circles and fill with spinach mix. fold into desired shape, thinly coat with egg and spinkle with grated cheese.

Bake at 350 degrees till golden brown.
