For bottom of 11 3/4 x7 1/2 x 1 3/4 pan or ovenproofed skillet:
1/4 lb. margerine (1 stick) melted
1 cup brown sugar
6 to 8 slices of canned pineapple
A sprinkle of nutmeg or cinnamon if desired

For the batter:
1 cup sifted flour
1 tsp. baking powder
3 eggs
1 cup of white sugar
6 tbls. of pineapple juice

Directions:

Set oven at 325º. Put melted margerine in bottom of pan. Spread with brown sugar. Add a little nutmeg or cinnamon. Cover with pineapple slices. Add cherries in center of pineapple if desired.

Beat egg yolks until lemon colored, add white sugar, a little at a time, beating well. Add pineapple juice, add flour and baking powder. Fold in stiffly beaten egg whites. Pour over pineapple. Bake about 35 min. Turn downside up on plate while still warm.
