1/2 onion grated or diced fine
1 egg or possibly 2
flour, enough to make a medium batter
salt to taste

garnishes: maple syrup, slices of cheese, raw onion, apple sauce, sour cream

Directions:

Heat up an iron skillet and coat with oil. Put several large spoonfuls of mixture in pan, frying until brown on one side, then flip to brown other side. Serve while hot with whatever garnishes your family likes. My husband Al uses applesauce; growing up, our mother always served these with maple syrup and sliced cheese; my Daddy ate his with slices of onion.

I grew up eating potato pancakes for dinner. It was a delicious and inexpensive meal my mother could prepare for our large, hungry family. This is a recipe from a time when cooking was more simple, but still yummy.
