8 c. water
2 c. uncooked white grits
1/2 bar of large Velveeta cheese
1/2 c. chopped jalapeņo peppers
1 tsp. garlic powder (to taste)
3 - 4 tbsp. jalapeņo juice
1/2 tsp. cayenne pepper
3 - 4 beaten eggs
dash of salt to taste

Directions:
Preheat oven to 300 degrees. Boil water. Add grits, slowly while stirring. Allow grits to simmer while covered for 5 minutes. Stir occasionally.

Meanwhile: Chop cheese, add jalapeņo juice, microwave one minute or until cheese is melted. In oven proof dish, stir: cooked grits, melted cheese, beaten eggs, garlic powder, cayenne pepper, and chopped peppers. Bake 45 - 60 minutes.
