2 8oz packages of low fat cream cheese

1 cup Parmesan (I prefer the DiGiorno brand from deli section)

2-3 cups chicken broth

1 package frozen chopped spinach, thawed and drained

1 package frozen peeled and deveined shrimp (don't thaw) - about 2 lbs.

Directions:
1. in a sauce pan, put cream cheese and melt over medium heat

2. add Parmesan and 2 cups of broth

3. add spinach and stir until mixed in sauce

4. add frozen shrimp (as much from the package as you think you'll want). allow shrimp to thaw in sauce slowly. don't boil sauce and shrimp will be tender. cook until shrimp are soft and bright pink.

5. add salt, pepper and garlic to taste

6. if sauce seems too thick add some more of the broth.

7. serve over pasta (i like the low carb pasta by Dreamfields)

Sometimes I'll add Tony Chachere's Creole Seasoning instead of salt to make a spicy version.
