Olive oil, 1 glug
1 small onion, diced
1 red pepper, diced
1 tin cannellini beans
1 28-oz tin diced tomatoes, drained
1 zucchini, halved lengthwise and thinly sliced
1/4 cup white wine
3/4 cup chicken or vegetable broth
fresh thyme and oregano
red pepper flakes
1/2 cup Parmesan cheese, grated or shaved

Directions:
Directions:
Saute onion and red pepper in olive oil. Add zucchini, cannellini beans and diced tomatoes. Add thyme and oregano and stir. Add white wine, simmer and reduce. Add chicken broth and red pepper flakes. Serve with a sprinkling of grated or shaved Parmesan cheese.
