5 eggs
1 tsp salt
1/4 tsp pepper
1/2 cup chopped onion
1 small clove garlic
1/2 cup bean sprouts (washed & dried)
3 scallions, chopped
1/2 cup chopped celery
1 cup cooked pork, diced
2 tbsp soy sauce
4 tbsp oil

Directions:

Lightly beat eggs with salt and pepper. Mix meat and soy sauce - blend into eggs. Add vegetables and mix. Heat oil in wok or skillet over medium high heat. Using a ladle, drop mixture into oil being careful not to make them too large - about 5 inches across is about right. Fry as an omelet until browned on both sides - using spatula to turn. Keep them in a warm oven until ready to serve.
