4 chicken thighs
1 large onion sliced
1 can of Old El Paso Green Enchilada Sauce
½ cup water
1 cup rice

Directions:
Directions:
Place chicken in crock pot and cover with onion. Pour in can of enchilada sauce and water. Cover and cook on high setting for about 5 hours. Add rice and cook until tender.

This is a great meal to fix while we are out touring during the day.
Sometime we use chicken breast. One could probably use chicken tenders if desired.
