2 cups cooked & riced white potatoes
1/2 teaspoon salt
1 Tablespoon shortening
1 1/2 cups flour

Directions:
Directions:
Peal and cook WHITE POTATOES till done.
While still hot rice the potatoes, then cool.
Add salt and shorting to 2 cups of riced potatoes, cut in with a fork.
Add 1/4 cup flour at a time, cut in with a fork until starts to stick together, do not use much flour, will make lefse tough.
Use remaining flour to roll out lefse with. (Will not use all of the flour)
Heat griddle to 350º
Form a walnut size ball of dough (should be moist)
Flour surface and roll out dough turning often with a die cut rolling pin until paper thin & about a 7 inch circle.
Place on hot griddle, bake until brown spots appear , it is done.
As you bake place between two towels to hold in heat ( makes soft)
Eat right away or put in plastic bag and freeze or refrigerate. (wrap in foil and hear in oven before serving)

Butter lefsa, roll up and eat.
My grand kids put sugar or jam on the lefsa, roll it up and eat.
These were made for melted butter and Ludafish for the holidays.
I boil up 5 lbs of potatoes & rice with my canning siva which is a cone shaped aluminum siva with wooden cone shaped press I run around the inside of the siva to press out potatoes.
