¾ Cup sugar
2 ¼ C. flour
1 tsp baking powder
1 C. milk
3 eggs, separated ½ Cup, butter melted
Twist of lemon (or use 1 teaspoon lemon juice)

Directions:
Directions:
Sift dry ingredients together in a bowl. Add egg yolks and milk to dry ingredients and beat together thoroughly.
In a separate bowl, beat egg whites until stiff.
Stir half of the egg whites into the batter and then fold in the remaining egg whites and stir until well-blended.
Add melted butter and twist of lemon and mix until smooth.
Pour batter on the heated waffle iron. Cook according to waffle iron directions.

This is the best waffle recipe I have found. It is from my sister-in-law, Kathy Bahl. She uses 4 egg whites and skips the use of the egg yolks.
