3 or 4 medium potatoes
1 small onion
salt and pepper
2/3 c. flour
1/4 c. butter

Directions:
Directions:
Grate peeled potatoes. To potatoes add flour and salt and pepper and toss thoroughly. Meanwhile have ready a hot skillet and melted butter. Put potatoes mixture in and leave unstirred for 5 minutes. Then stir and turn over. Leave for another 5 minutes. Repeat until crispy brown. When brown, turn heat to low and leave until ready to serve - at least 10 minutes.

For brunches, add sliced fresh mushrooms and a few good shakes of Parmesan cheese to the pan before frying.
