1 9" baked pie crust
1 1/4 c. white sugar
4 T. plain flour
3 T. cocoa
1/2 tsp. salt
3 eggs, divided
2 1/2 c. milk
3 T. butter
2 tsp. vanilla
- - for meringue - -
6 T. white sugar
dash cream of tartar
1 tsp. vanilla

Mix dry ingredients; set aside. Blend egg yolks and milk in saucepan. Stir in dry ingredients, and constantly stir over medium heat until thick. Let mixture cool. Pour into prepared pie shell.

Meringue preparation: beat until frothy, add cream of tartar; gradually add sugar; beat until stiff. Add vanilla. Spread prepared meringue over pie filling (be sure to spread all the way to the crust to seal). Bake at 350º until meringue is browned (6-8 min., but watch carefully).
