3 eggs
1 cup oil (I use canola)
2 cups white gran. sugar
1 tsp. baking soda
2 tsp.cinnamon
2 cups finely chopped or grated zucchini
1 tsp vanilla
3 cups flour
1 tsp salt 1 tsp baking powder
optional 1/2 cup raisins and or 1/2 cup chopped nuts

preheat oven 325 degrees
Beat eggs until foamy, add oil, sugar, zucchini and vanilla. Using mixer beat well, Sift dry ingredients together. Add dry ingredients (and nuts if adding) to egg mixture. Divide batter into two greased loaf tins. Bake in 325 degree oven for 45 minutes to one hour. U can also use the mini loaf tins :3 mini's equals=1 reg tin. may take less baking time.

This is a family recipe I grew up enjoying. My mom and her mom made it all the time, It was always such a treat to have a zucchini bread come out of the oven Everyone loves it ! Hope you will too!!
