2 tbsp. vegetable oil
1 cup chopped onion
1 green pepper, chopped
1 cup celery, chopped
1 egg, lightly beaten
2 cups chopped and cooked pork
1 can (16 oz.) bean sprouts, drained
2 cups cooked rice
2-3 tbsp. soy sauce

In a wok or deep sided skillet, heat oil over medium high heat. Add onion, pepper, and celery. Stir fry 3-4 mins or until crisp-tender. Push vegetables to one side of skillet. Without stirring in vegetables, add egg to other side of skillet; cook and stir until scrambled, breaking egg into small pieces. Add pork and bean sprouts and rice to skillet. Stir fry until heated through. Stir in soy sauce and serve immediately.
