1 lb ground beef
1 medium onion, chopped
2-4 cloves of garlic, minced
1 medium green pepper, chopped
2 cans (14 1/2 oz. each) beef broth (I use bouillon cubes and water)
1 can (14 1/2 oz.) diced tomatoes, undrained
1 1/2 cups picante sauce
1 cup uncooked spiral or small shell pasta
1 tsp. chili powder
1 tsp. dried parsley flakes

Shredded cheese, sour cream, picante sauce, tortilla chips or bread

In a large saucepan, cook the beef, drain. Saute in the onions, garlic and green pepper. Add in the broth, tomatoes, picante sauce, pasta, chili powder and parsley. Bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender. Serve with shredded cheese, sour cream, tortilla chips or bread.

Personal Notes:
I add shredded zucchini (2-3 cups), it blends in with the green pepper and is unnoticeable, but gives us more veggies. I often double the amount of diced tomatoes and my little ones like it with more pasta - it makes it thicker and they can spoon it up more easily.
