1 cup mild light molasses
1 cup margarine
4 ¾ cup sifted flour
1 tsp baking powder
1 ½ tsp salt
¾ tsp soda
2 ½ tsp cinnamon
2 ½ tsp ginger
1 tsp nutmeg
½ tsp cloves
1 cup brown sugar – firmly packed
1 large egg

Heat molasses slowly in a sauce pan large enough for mixing cookies. Remove from heat; add butter or margarine and stir until melted, cool. Sift together next 8 ingredients, mix with brown sugar into the sauce pan; add egg. Chill 1-2 hours or until stiff enough to handle. Roll ¼” thick on a lightly floured board. Cut with a ginger bread man cookie cutter. Place on lightly greased cookie sheets and bake in a pre-heated 350° oven for 12-15 minutes. Decorate as desired with raisins, currants, or frosting.

The recipe comes from Stuhr Museum of the Prairie Pioneer, a living history museum in Grand Island, Nebraska. The museum has a railroad town that has been used for filming movies, including “My Antonia” (starring the Doogie Howser). Every December, there is a Christmas open house and the whole town is decorated like Christmas during the pioneer days. They serve apple cider and gingerbread cookies at the different houses, and this is the recipe.
