1 (3oz) lemon jello
1 C boiling water
1 C heavy cream whipped (I use a small container of Cool Whip instead)
1 1/2 C cottage cheese
1 (3oz) pkg lime jello
1 C boiling water
1 C pineapple juice
1 C crushed pineapple drained (can use this as the juice called for)

Directions:
Directions:
Dissolve the lemon jello in the water. Chill until slightly thickened. Beat until light and fluffy. Fold in whipped cream and cottage cheese. Pour into gelatin mold.
Dissolve lime flavor jello in water. Add pineapple juice. Chill until slightly thickened. Add pineapple
Pour onto lemon layer. Chill until firm. Unmold unto platter

This is from the 1959 edition of the Farm Journal Country Cookbook. It was my first cookbook. I usually don't use a mold and put the lime layer on the bottom of a 13X9 glass casserole. Topped with the lemon/cheese layer. After chilled until firm, you can cut into squares to serve.
