2 cups of white sugar
1 cup of veg oil
4 eggs
2 teaspoons of coconut extract
3 cups of all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 cup shredded coconut flakes

Directions:
Directions:
1. Pre-heat oven to 375- lightly grease a 9 by 5 inch loaf pan.
2. In large bowl beat together sugar and veg. Oil. Beat in eggs and coconut extract. In a separate bowl, sift together flour, salt, baking powder and baking soda. Stir flour mixture into egg mixture alternately with buttermilk and coconut.
3. Bake in preheated oven for about 45 min-(to check if bread is cooked all the way- insert a toothpick in the center
of the loaf-if it comes out clean,it is done).
