Fern's Lemon Bread Recipe

1 1/2 C. flour, 1 c. sugar, 1 t. baking powder, 1/2 t. salt, 2 eggs, 1/2 c. milk, 1/2 c. oil, 1 1/2 t. grated lemon peel

Glaze: 4 1/2 T. lemon juice, 1/3 c. sugar

Directions:

Sift together flour, sugar, baking powder, and salt. Set aside. In a large bowl, mix 2 eggs, milk, oil, and grated lemon peel. Add flour mix to liquid and stir until just blended. Pour batter into grease and floured loaf pan (you can use 2 small tins). Bake @ 350º about 45 minutes (or until toothpick comes clean).

Glaze: In small pan, heat lemon juice and 1/3 c. sugar until sugar is dissolved. Fern does this just when she takes the bread out of the oven.

When bread is done, use long skewers to poke holes (lot of 'em), clean to the bottom. Drizzle hot glaze over top so it soaks in.
