3 boneless chicken breasts
3 cloves garlic cut in half
8 cups water
1 cup carrot slices
1 cup celery cut in bite size pieces
1/2 cup chopped onion
2 cans chicken broth
salt and pepper to taste

dumplings:
1 1/2 c. all purpose flour * (* if using self-rising flour, omit the baking powder and salt.)
2 tsps. baking powder
3/4 tsp. salt
3 tbsps shortening
3/4 c. milk

Directions:
Directions:
In a large stock pot cook the chicken with garlic in the water until done (about 15 minutes). Strain liquid and save stock. Cool chicken breasts and cut into pieces.
Return the stock to the pot and add 2 cans chicken broth and bring to a boil. Add the vegetables and let cook until done (about 20 to 30 minutes).
Mix the dry ingredients for the dumplings with the shortening using 2 table knives until it looks like meal and then add the milk (they will be a bit lumpy) and drop by tablespoon full into the chicken broth. Cook uncovered for 10 minutes. Remove cover and cook for 10 minutes more.

You can use a rotisserie chicken and pull the meat from the bones instead of cooking the chicken breasts if you are pressed for time. In this case, use 3 more cans of chicken broth plus 4 to 5 cans of water.
