2 lbs green beans, cleaned
2 C onions, chopped
¼ C olive oil
1 lb canned diced tomatoes (get a good brand)
Salt and pepper to taste
Garlic salt or powder to taste

Directions:
Directions:
Saute onion in olive oil until yellow. Add tomatoes and cook slowly for 30 min. Add beans, salt, pepper, garlic salt/powder to taste. Cook until done. Makes about 6 servings.

Note: Other vegetables can be prepared the Yiahni way. I usually add chunks of potatoes, carrots, celery, or whatever sounds good to the beans. You can make fava beans or eggplant this way, chick peas, okra, potatoes, just about anything.

Also, I typically double this recipe.
