Baklava Recipe

1 lb filo dough
1 ½ C melted, clarified butter
4 C nuts, chopped
4 tbsp brown sugar
2 tsp cinnamon

3 C sugar
1 ½ C water
Juice of ½ lemon
1 C honey
Cinnamon sticks

Combine sugar, water, and lemon juice. Boil 10 minutes. Slowly add honey and cinnamon sticks and simmer 5 minutes. You can use it right away or, my grandmother always left it on the counter in a glass pitcher overnight for the cinnamon to infuse it.

Combine the nuts, brown sugar, and cinnamon in a bowl and set aside. Layer 3 sheets of filo buttering each. Sprinkle a thin layer of nut mixture. Add 2 layers of filo, buttering each one. Then add a second layer of nut mixture. Layer 2 more layers of filo, buttering each one. Then add a third layer of nut mixture. Add 1-3 more layers of filo on top, depending on how large you want the pieces. Roll along the long edge using a jelly roll fashion, buttering as you roll. Put the roll on one more sheet of filo, buttering of course. This holds it all together. Slice into about 1” inch pieces and place on ungreased cookie sheet. Bake at 325 about 25-30 min. The bottoms should be golden brown but it’s up to you how raw or done you want them. Cool in the pan, then pour warm syrup over the pieces. Let stand for 1 hour. Then take each piece and put it syrup side up in a cupcake paper. This lets the honey soak back through.

This is Patricia Coukos' recipe adapted to the rolled style. She always made it in a pan but it's easier to make and give as gifts this way. If you want to make it in a pan I can add that variation.
