1 lb box of filo dough
2 10 oz boxes frozen chopped spinach or 1 lb fresh
1 lb feta cheese
1/4 tsp salt
1/4 tsp white pepper
6 eggs, beaten
1 bunch scallions, chopped
1/2 bunch fresh dill, chopped (or about 3/4 tsp dried)
1 bunch parsley, chopped
1+ C clarified butter (it's very important to clarify the butter)

If you're using frozen spinach, defrost it and drain it. I squeeze it between a clean dishtowel or paper towels. Get ALL the water out. Crumble the feta into a bowl. Add the eggs, salt and pepper, spinach, parsley, scallions, and dill and mix well.

Butter a 9x13" baking dish/pan. Lay 6 sheets of filo on the bottom of the pan, buttering each layer with the clarified melted butter. Add the filling, spread evenly, and lay 6 more sheets of filo on top, buttering between each layer. Trim the edges if the filo was bigger than the pan. Butter the top and edges well. Cut through the top layers to desired portion sizes. Bake in a 350º oven for about 45 minutes until it's golden brown and risen.

You can also make individual triangles using the same filling recipe. Just cut the filo into long strips, place a couple tbsp of filling in the bottom corner, and fold into a triangle. Butter the entire piece of filo on both sides. They'll bake in less time of course...
