1 large egg white
1 T. water
4 cups salted, roasted nuts (about 1 1/4 pounds). I always use pecans and almonds.
1 cup sugar
1 1/2 T. cinnamon
1/8 tsp nutmeg
1/4 tsp red chile powder
(Note, if you are using unsalted nuts, add 1/2 tsp of salt. But it tastes better when you use salted nuts)

Preheat oven to 275 F.

Whisk together egg white and water in a large bowl until it is fluffy and frothy. Stir in the nuts to coat them with the egg mixture. Stir together sugar and spices and then stir them into the nuts, and coat them well. Spread nuts in a lightly greased shallow pan and bake in middle of oven until dry. About 45 minutes. Poke a spoon around during cooking to help break them apart or break into smaller pieces after cooled.
