Greek Baked Pasta Recipe

2 tbsp. extra-virgin Olive Oil
1.5 lbs. lean Ground Lamb (can substitute beef if you prefer)
1 Onion, chopped
1 tsp. dried Oregano
3/4 tsp. Cinnamon
Pinch ground Cloves
Salt and Pepper
3 cups homemade or jarred Marinara Sauce
1 lb. Ziti
3 cups Ricotta cheese
4 large Egg Yolks
1/2 tsp. ground Nutmeg
3/4 cup grated Parmesan Cheese

Preheat oven to 350º
Bring large pot salted water to a boil and cook pasta until almost al dente. Drain and return to pot.
In large saucepan, heat olive oil and add lamb, onion, oregano, cinnamon, cloves, and pinch of salt and ground pepper.
Cook mixture over high heat, stirring frequently, until lamb is cooked through and no longer pink and liquid has evaporated - 8-10 minutes.
Add marinara sauce and bring mixture to a boil. Boil until sauce has reduced a little (~about 5 minutes), stirring occasionally.
Mix 2 cups ricotta cheese with egg yolks, nutmeg, and 1/2 cup of Parmesan. Mix until smooth. This can be done in a blender or food processor is you choose. Season mixture with salt and pepper and then add last cup of ricotta cheese.
Add lamb mixture to the pasta and toss. Transfer to a 9x13 baking dish.
Pour ricotta mixture over the pasta mixture and sprinkle with remaining Parmesan cheese.
Bake for ~20 minutes until dish is heated through.
Then broil under broiler until top is golden brown.
Let stand for a few minutes before serving.

Not sure if you like lamb or not, but the dish barely tastes like lamb and is very good.
