1 cup Panko (Japanese bread crumbs which can be found in all grocery stores)
1/4 tsp. Cayenne (optional)
1/2 stick Unsalted Butter (softened)
5 Chicken Breasts
1/4 tsp Salt
1/8 tsp Ground Pepper

Directions:
Directions:
Stir together Panko, cayenne, 1/4 tsp salt and 1/8 tsp pepper in a shallow bowl.
Mix butter, salt and pepper together in a shallow bowl.
Brush butter mixture over the chicken breasts.
Roll chicken breasts in bread crumb mixture.
Place chicken breasts, skin side up, in a baking pan.
Bake chicken until browned and cooked through (30-40 minutes).
Remove from oven and let stand uncovered for ~10 minutes to crisp.
