Ingredients:  
1 pound hamburger (omit in vegan version)
1 large onion, sliced
2 celery stalks, sliced
1 cup mushrooms, sliced
Green and/or red pepper, cut in chunks
28 oz can tomato sauce
28 oz can diced tomatoes
1 beef stock cube, (veggie stock cube for vegan version or omit)
1 bay leaf
Basil, oregano, salt, pepper , garlic to taste

Directions:

1. In large pot saute onions and celery in oil and garlic until soft.
2. Add meat (if used) and cook till brown. Drain off excessive grease.
3. Add all other ingredients, bring to boil and simmer, covered, for at least 30 minutes
