2 lbs peaches (peeled and sliced)
1 1/2 c. water
1 1/4 c. sugar
3 tbsp quick tapioca
1/2 c. shortening
1/2 c. milk
2 tbsp butter
1/4 tsp salt
1 1/3 c. flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp salt

Directions:
Combine fruit, water, 1 1/4 c. sugar, tapioca, 1/4 tsp salt in a sauce pan. Let stand 5 min. Bring to a boil over medium heat, stirring constantly. Remove from heat. Mix together flour, 1/4 c. sugar, baking powder and 1/2 tsp salt. Cut in shortening, gradually add milk. Stirring until a soft dough is formed. Knead on floured board until dough can be shaped (approx 30 secs) Roll out to fit top of baking dish, cut slits. Pour fruit mixture into greased dish. Dot with butter. Place dough on fruit mixture. Bake at 425º for 20 mins. Sprinkle with confectioners sugar.
