Pork - cook enough to make 2C of ground meat. Country style ribs are. Boil with some chopped onion. Run the meat through a food processor or grinder. Save the broth.
1 C cornmeal
4C skimmed broth from cooking the pork
1/2 t sage (optional)
salt and pepper to taste.

Directions:
Grind meat and set aside. Cook the cornmeal in the broth until think and cornmeal is done. Add the cut up meat. Don't scrimp on the cornmeal. If the meat and broth is too rich, it won't set up right. Mix and pour into a greased loaf pan. Chill. Slice about 3/4 in thick, roll in flour and fry til brown.

This is from Aunt Antonetta (Grandpa Smith's brother Alva's wife). Grandma Kendrick also made it often. Can traditionally be made with rabbit, squirrel, etc.
