450g (about 3 1/2 cups) flour
1.5kg (about 3 1/4 lbs) potatoes
2 eggs
Pinch of salt

Directions:
Boil potatoes in salty water, when cooked peel the skin off and pass it through the mouli (do not blend or it will become like glue) or mash it finely. Add flour, salt, eggs and prepare the dough. Roll it into small sticks and cut small pieces of about half an inch. Boil it in hot water. When they start to surface to the top, they are cooked, GENTLY strain and serve with your favorite sauce.

** MOULI is a hand-operated grater for grating or pureeing small quantities of food.**

** MAKE SURE the water is NOT rapidly boiling but is a GENTLE ROLLING BOIL **

** Gnocchi is very fragile so you must be GENTLE when handling during cooking **
