5ml (1 tsp.) oil
1/4 onion, finely chopped
50g (2oz) long grain white rice
50g (2oz) frozen mixed vegetables
1 small garlic clove, crushed
10ml (2 tsp.) tomato ketchup
10g (3 1/2 oz can) tuna in water
salt and pepper (optional)

Heat oil in small pan and fry the chopped onion for about 3 minutes until softened. Add the rice, mixed vegetables, garlic, tomato ketchup and 250ml (8 fluid oz) water and a little salt and pepper, if desired. Bring to a boil and simmer uncovered for 10 minutes. Drain the tuna and add to the rice mixture and mix well. Cook for 3-4 minutes, stirring occasionally, until the water has been absorbed by the rice and the rice is tender. Spoon onto plates and cool slightly before serving.
