5 tbsp. Oil
1 - 3lb chicken, skinned & cut into 12 pieces
1/2 tsp. ground green chilis (optional)
2 Large onions, finely chopped
2 tsp. coriander & cumin powder
4 medium tomatoes, peeled & pureed
1/2 tsp. tumeric powder
2 tbsp. tomato paste
1/2 tsp. salt
1 1/2 tsp. ground ginger
1 1/2 tsp. garlic powder
2 tbsp. chopped fresh coriander leaves
4 Medium potatoes, peeled & quartered
Lemon juice to taste

Directions:
Heat oil in a large saucepan. Add onions and fry until golden brown. Add pureed tomatoes, tomato paste, ginger, garlic, salt, tumeric, coriander and cumin powder. Cook mixture on low-medium heat for approximately 10 minutes adding a little water at a time until sauce is well blended and thick. Add the chicken pieces and potatoes - cook on medium heat, stirring occasionally until chicken is thoroughly cooked. Add 2 - 3 cups of water to achieve desired consistency. Check for desired amount of salt, add lemon juice to taste. Add freshly chopped coriander and bring to a boil. Ready to serve.

If thick, it can be served with naan or paratha; if slightly runny, it can be served with boiled or steamed rice or bread.

TIP: TO PEEL TOMATOES, PLACE IN HOT WATER FOR A FEW MINUTES.
