MEATBALL CURRY
1 lb extra lean ground beef
3 slices of bread (moistured & drained)
1 tsp coriander
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp ginger
1 tsp salt
1/2 tsp ground green chilis (optional)

CURRY / COCONUT SAUCE
5 tbsp oil
1 Large Onion, sliced lengthwise (thin)
1 tsp garlic powder
2 medium tomatoes, peeled & pureed
3 medium potatoes, peeled & cut into 1" cubes
1 tsp coriander
1 tsp cumin powder
1/2 tsp tumeric
2 cans coconut milk
1 1/2 tsp salt
Lemon juice (to taste)
1/2 tsp ground green chilis (optional / to taste)
2 tbsp chopped fresh coriander leaves

MEATBALL MIXTURE:
Mix together coriander & cumin powder, garlic, ginger, salt & bread in a bowl. Taste for salt. Add ground beef and knead until mixture is well combined. Roll 30-35 1" balls. Cover to prevent drying.
CURRY / COCONUT SAUCE
Heat oil in large saucepan. Add onions & fry until soft and beginning to turn golden brown. Add tomatoes, garlic, coriander & cumin powders, tumeric & salt. Stir occasionally and allow mixture to cook for 5 minutes on medium heat. Add 1 cup of water & 1 can of coconut milk. Bring mixture to boil while stirring gently.
ADD MEATBALLS TO CURRY/COCONUT SAUCE:
Add potatoes and very gently the meatballs to boiling mixture and cook until meatballs and potatoes are cooked. Add second can of coconut milk and freshly chopped coriander leaves and bring to a boil. Taste for salt. Turn heat off and add lemon juice to taste.
