2 lbs Chicken shredded
1 C. chopped onion, browned
1/2 tsp. Cumin
1/2 tsp. garlic powder
1/2 tsp. chili powder
1 C. cheddar cheese
3/4 C. salsa
2 cans red enchilada (reserve 1/2 Cup)
10-12 soft shell tortilla

Directions:
Directions:
Mix all together except for cheddar cheese, tortilla and 1/2 C. enchilada sauce.

Grease 9X13 pan.

Tear and place half of tortilla on bottom of pan. Layer half of mixture and then half of cheese. Layer again. Drizzle 1/2 cup enchilada sauce over top.

Bake at 350º for 20 - 25 minutes.
