1 whole chicken (cut up)
Salt
Pepper
Paprika
Canola Oil
1 large onion (chopped)
1 green bell pepper (chopped)
2 gloves garlic (finely chopped)
1 large packet yellow rice
1 can chicken broth
1 can of whole tomatoes
¼ teaspoon cumin seed

Directions:
Directions:
Preheat oven to 350 degrees. Sprinkle chicken pieces with salt, pepper, and paprika. Let it set for at least 30 minutes. In a large skillet, brown chicken in oil. Remove chicken and set to side. In same skillet, sauté the chopped onion, bell pepper, and garlic cloves. Add the packet of yellow rice and stir until rice glistens, about 5-7 minutes. Add the can of chicken broth and the tomatoes only from the can and the cumin seed. Spray a 13 x 9 baking dish with a non-stick cooking spray. Place rice mixture first in the baking dish then place the browned chicken pieces on top. Bake for 1 hour and 15 minutes.
