6 Large Onions
1 cup white Wine
1/2 gal Chicken Stock
1/2 gal Beef Stock
1/4 lb butter
1 tsp Thyme Leaf(Dried)
1Tblsp L&P Worcestershire sauce
1 cup cooking Sherry
1 Tblsp Maggie Seasoning

Directions:
Directions:
Peel & julienne Onions. In a Large stock Pot melt butter and caramelize Onions.
Deglaze with white Wine. Add Beef & Chicken Stock, Thyme, L&P Worcestershire sauce & Maggie. Bring to boil for 20 minutes. Add cooking Sherry and store under refrigeration.
