2 ¼ c. sifted flour
½ c. sifted powdered sugar
1 c. butter or margarine
4 eggs, beaten
2 c. granulated sugar
½ c. lemon juice
2 tsp. grated lemon peel
½ t. baking powder

Directions:
Directions:
Sift together 2 cups flour and powdered sugar. Cut in butter until mixture clings together. Press mixture into a 13 x 9 in. glass baking dish. Bake at 350º for 25 minutes or until lightly browned. Beat together eggs, granulated sugar, lemon juice and peel. Sift together the remaining ¼ cup flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake at 350º for 25 minutes longer. Sprinkle with additional powdered sugar. Cool. Cut into bars.

Originally published as "doug ruoff's deluxe lemon bars". I clipped this recipe from a newspaper years ago. My mother started baking these bars and they became one of her favorites.
