Ingredients:  
1 lb. Orzo pasta, cooked and cooled
1 C. Feta cheese
1/2 C. toasted pine nuts
1 C. craisins (nice with the blueberries, pomegranates and cherries craisin blend)
1 bag spinach
1 C. Arugula

Dressing:

1/2 cup red raspberry vinegar

3/4 cup olive oil

1 tablespoon Italian seasoning

2 cloves garlic chopped finely

Salt and pepper to taste


Directions:

Mix dressing ingredients.

Combine salad ingredients.
Toss with dressing and serve immediately.

Robin Smilanich brought this to a funeral in the Riverwoods Ward and it was a huge hit. This is a nice twist on the familiar spinach salad.
