1/2 each large green, red, and yellow peppers (cut in 1/8 inch strips)
2 boneless, skinless chicken breasts (cut into 1/2 inch strips)
1 scallion (cut into thin diagonals)
2 tablespoons olive oil
1/4 teaspoon thyme
Salt and pepper
12 ounces ziti noodles
2 tablespoons lemon juice
1 tablespoon thin sliced scallion tops
Parmesan cheese

Directions:
Directions:
Heat oil in medium skillet. Add peppers and scallion. Stir fry for 2 minutes. Add chicken; sprinkle with 1/2 thyme, salt, and pepper to taste. Cover and cook over low heat until cooked through (5 minutes). Cook pasta al dente (firm to bite), and drain. Toss the chicken and peppers, pasta, lemon juice, scallion tops, and remaining thyme. Serve with shaved Parmesan cheese.
