Bag of navy beans or marrowfat beans (no beans with black spots in them)

Grated onion

Celery and celery tops

Parsley

One can of tomato juice

Use pork butt or small piece of end of ham (I have to use butts because the ham is too expensive.) Green pepper

Directions:
Directions:

Wash the beans, drain them, then cover them with lots of water and let them soak overnight.

Next day, heat beans, ham, and grated onion for a long time.

Then cut up celery and celery tops into small pieces. Also cut green pepper into small pieces. Grate a large carrot or two and simmer all these ingredients a long time.

Add a can of tomato juice

When the soup is almost ready, add some cut-up parsley

I use very little salt, if any.

Use a large pot and stir often to prevent sticking.

Unfortunately, Mildred like many home cooks does not give exact times.

Note from Debbie: I note that Mom always asked for, in addition, to the butt, ham bones…they add lots of flavor. They get removed after the soup has cooked, but she always used bones too.
